Corndog Muffins

I was trying to think of an easy appetizer I could bring to my friend’s New Year’s eve party tomorrow and my other friend’s 1st birthday party for her twin boys on Saturday. I was stumped for a few days and knew I wanted it to be something simple since I would be preparing it twice. I had been craving a hot dog for some reason, even after indulging during the holidays. I had seen some similar recipes online on Food Network for some baked corn dogs and variations of corndog muffins so I decided to come up with my own! It is so easy, and really satisfies the hot dog craving. It will be perfect for both events!

2 boxes of corn bread muffin mix (I used Jiffy)

2 teaspoons of cayenne pepper

2 teaspoons of paprika

A few dashes of hot sauce (I used Franks)

4 hot dogs, cut into 5ths

My cornbread mix called 1 egg and 1/3 cup of milk (per box). This made 18 muffins.

In a large bowl combine two boxes of mix and whatever the mix calls for, in my case eggs and milk. Once combined add paprika, cayenne and hot sauce. Mix well. Let the batter stand for a few minutes.

While the batter is resting cook hot dogs on a grill pan, I actually used a little grilled cheese pan so that I could get some char/grill marks on them. You could probably skip this step but I like the flavor it adds to the dog.

Line cupcake pan with cupcake liners so the muffins come out easy. I think these would make cute mini muffins too if you have that type of pan. Fill cups about half way to 3/4 of the way up and insert a piece of hot dog in each. Cook at 400 degrees for about 18 minutes or until golden brown! I actually used my toaster oven to make these as I do with most things to avoid having the oven on and it worked out just fine!
