Friday night and pizza go hand in hand. Nothing is better than coming home from a long week of work/school and having a cheesy slice. Instead of ordering delivery I decided to make my own pizza tonight and it really hit the spot. This is a super easy buffalo chicken pizza that really exceeded my expectations. When I was telling my mom what I was going to make she was very skeptical but it seriously turned out so well! She agreed that it looked delicious from the pictures I sent her after!
1 ball of frozen pizza dough, thawed
1 teaspoon of olive oil
Garlic powder to taste
1/2 cup shaved brussels sprouts
1/4 cup of diced red onion
2 teaspoons of light garlic caesar dressing or ranch
1/3 cup of shredded mozzarella cheese
2 slices of buffalo chicken deli meat
Additional hot sauce to taste
Start by rolling out the pizza dough on a sheet pan covered in tin foil. Drizzle olive oil over dough and rub with your fingers to cover the whole surface. Sprinkle on garlic powder. Bake the dough for about 10 minutes on 450 to pre cook the crust. This would be a good pizza to make with a cauliflower crust too. I opted for the real deal today despite what my stomach thinks.
While the crust is cooking up I sautéed the brussels and red onion in a pan to give them a little color and char since they wouldn’t have that much time in the oven later. Season with salt and pepper.
When the crust is ready remove from oven and scoop dressing into the middle of the pizza and spread it out with the back of a spoon. Remember, this isn’t truly a pizza sauce so you don’t want to overload it with dressing, a thin layer is fine. Now typically when you hear buffalo chicken you automatically think of ranch or bleu cheese. I opted to use a really good garlic caesar dressing and it was super tasty. I think ranch or bleu cheese dressing would be just as good here. Next sprinkle on mozzarella. Rip your buffalo chicken slices into bite sized pieces and spread around the crust. The deli sliced buff chic is a great short cut! Top with brussels and onions. Return to the oven for another 10 minutes or so until the cheese is melty and bubbly. Add more hot sauce if you want some extra spice! Happy Friday!
