Sorry, I have been gone again for a while. But do not worry! I have still been cooking!
I don’t know about you but I am trying to SOMEWHAT behave in-between Thanksgiving and Christmas/New Years, which is easier said than done…but I am trying. This salad is a flashback from my childhood that I recently rediscovered and the good news is it is guilt free. This is pretty much the only salad I would eat that my mom would make, and I use the term salad loosely because my salad was pretty much just romaine and chow mein noodles covered in the dressing. Well something randomly made me think of this salad the other day and I simply had to have it, even though I probably haven’t had it in ten years. However this time I would actually include all the other ingredients! And it actually looks kind of festive with the red and green…how appropriate!
1 handful of spring mix
1 handful of chopped romaine
1 serving Perdue pre cooked chicken strips (I used the oven roasted kind)
1 mini cucumber, diced
1/4 cup of dried cranberries
1/4 cup of chow mein noodles
1/4 cup of mandarin oranges (OK…I actually still leave these out but I think other people might like them)….I actually sprinkled in 1/8 cup of shredded cheddar cheese instead which sounds like a weird sub but it is good…
1 Tbs olive oil
1 Tbs rice wine vinegar
1 tsp soy sauce
1/4 tsp sesame oil
So basically you just take all the ingredients and dump them in a big bowl. For the salad dressing I put all the ingredients in a little jar and shake it up to combine, this is how my mom always does it so that is the way I do it too. You could also whisk it together in a bowl. Pour the dressing on, toss and enjoy. This salad comes together so quickly especially because you are using the precooked chicken. I guarantee you will be going back for seconds!
